Step one was Harvest, Next is Floating
the Berries
Once the Cherry Berry has been picked the next step is to put the berries in a vat of water and see which ones float. It is remarkable that a berry with a misformed, underformed, or Berry Borer infected FLOATS!! So by floating the berries instantly berries that will not produce a quality bean are rejected and scooped away.
In a trip to Jamaican I went to the Mavis Bank Coffee Factory and watched as they took me through the process of making Blue Mountain Coffee. Floating the berries is the First step in a months long process of taking the Cherry Berry and turning it into coffee.
