Step 3 - Now for a Toast on the BBQ
In Jamaica they like to take advantage of the plentyful sunshine that is available year round and place the now pupled beans on the BBQ. This is basically a large concrete pad on which the beans are placed. At regular intervals people, using shovels, turn the beans giving them what they like to call a tan.
Actually what is happening in this process is that after pulping and a short fermentation period, the beans are place out into the sun to halt the fermentation process which removes the final bits of fruit that are left after pulping and ready the beans for further processing.
