Step 4 - Drying the Beans
Once the beans in Jamaica have been given a tan by the sushine it is time to bring the bean to the proper moisture content. This is now done with a wood fired mechanical dryer which much like a clothes dryer rotates the beans to heat them and make them all with the same mositure content.
After each of these various processes you are watching it is important to know that in Jamaican they give the beans a "vacation", they do not rush the process of preparing their beans for market and believe that the beans must rest before the next process takes place. It can take up to 6 months from the time a bean is harvested, floated, and pulped before the bean is stamped ready for export.
