Removing the Parchment
After the beans have been dried and taken a vacation they are ready to have the parchement removed. The Parchment is a paper like covering that still surrounds the bean, along with some dust from the vactaion.
In Jamaican, where coffee is processed as close to naturally as it can be done, this is done with a series of fans. These fans create a wind, which helps to keep the coffee house cooler in the heat of the day, but also allow beans that are falling down through shoots to have the parchment removed and collected for burning in the drying processes.
