Step 6 - Sorting the Beans
the all important process of sorting the beans into various categories. Once the coffee beans have been sent through the various stages of processing now it is time to sort the beans. This process removes bad beans, beans of irregular size or shape basically the rejects from the perfect beans.
In Jamaica some of this is done by machine but the final sort is done by the skilled hands of the sorters. They have been trained and are watched by the master sorters who check what they say are perfect beans. If too many bad beans remain the sorter re-sorts the beans again until they are up to standards. There is nothing like watching a person who sorts beans sort beans, their fingers move with speed and precision unmatched in any other industry.
