  • Plant grows into a bush and then a tree
  • It takes at least five years to get 1st crop from a tree.
  • Very labor intensive, the cherries ripen gradually. They are picked as they turn red over several weeks.

  • Arabica
    • Oval in shape, pale in color
    • Represents higher quality estate coffee
    • 80% of world crop
    • Gourmet is the top 10% of the arabica crop
    • 6000 ft. and volcanic soil are ideal growing conditions

  • Robusta
    • Grown in low altitudes
    • more resistant to disease
    • will tolerate higher temperatures and more rainfall
    • rounder and browner

  • Coffee can be stored a long time in the green bean form without deteriorating.
    
  • Use within 2 weeks after roasting.
    
  • Whole bean coffee will keep 3 months in the freezer.
    
  • Always keep roasted coffee in an airtight container.
    
  • For best results, store on the counter, refrigeration can add flavors and moisture, freezing can cause freezer burn.
